Mr. Mallikarjun is a Ph.D. research scholar at International Center of Excellence in Seafood Science and innovation (ICE-SSI), Faculty of Agro-Industry, Prince of Songkla University (PSU), Hat Yai, Songkhla, Thailand. He is pursuing his Ph.D. under Prof. Dr. Soottawat Benjakul’s supervision in Seafood science with specialization in food chemistry and biochemistry with Reinventing Scholarship. He received his M. Sc (Biochemistry) from Amity University Haryana, Gurugram in 2018. He completed his B.Sc (Biochemistry, Botany & Zoology) from St. Aloysius College/ University. Mangaluru in 2016. During masters he was an intern at CSIR- National Chemical Laboratory, Pune and worked in field of plant tissue culture and its metabolites. Also, he completed his dissertation work at CSIR- Institute of Himalayan Bioresource Technology, Palampur, Himachal Pradesh on the production of microbial enzyme Gama glutamyl transferase (GGT) obtained from the Bacillus species IHB B1644. After completion Master’s, he joined CSIR- Institute of Himalayan Bioresource Technology, Palampur, Himachal Pradesh as a researcher and worked as Project Assistant – II and Project Associate – I for 3.5 years till July 2022. During this period, he contributed in the field of Agronomy, biochemistry, entomology and research on honey and its by- products. He was a part of pioneer team to introduce low calorie natural sweetener Monk fruit (Siratia grosvenorii) in India. He also has experience as food quality control head in the food-industry. Overall, he has an knowledge in various field of research. Currently, he has focused his research on non-thermal processes and natural additives for shelf-life extension of seafood and products. Moreover, he exclusively works on shelf-life extension of Mantis shrimp Harpiosquilla raphidea with chito-oligosaccharides. With the short span in research of few years, he has an exposure all several prestigious CSIR National Laboratories and International laboratories. He has published 3 research articles in peer-review international journals Scientific Reports, International Journal of Food Science and Technology and MDPI Foods.
